Watermelon Margaritas are all the rage in Cabo San Lucas, Mexico. I was given a lesson in making one and they are very awesome.
Remove the seeds from 1/2 half a large watermelon. Whiz in the blender and freeze. Once frozen, remove from freezer and put into refrigerator to defrost until it easily breaks into cubes. Further break into smaller pieces.
Add 1/2 cup tequila and 1/2 cup pomegranate liqueur to the watermelon ice.
Whiz all in blender.
Put into pitcher or glasses, serve with lime rounds.
