Crios by Susana Balboa, female winemaker, is making waves all over the world.  Rated 91 by Robert Parker for the 2010 vintage this wine is a great under $20.00 bottle.  Similiar to Voignier, with aromas that hint at peach stones, white pear, flowers and citrus fruit.

Beautiful structure and acidity similiar to Sauvignon Blanc, with a fruity and floral taste while remaining dry.  Pairs wonderfully with smoked meats, mild to medium cheeses and seafood.  It goes very well with the following recipe:

French Macaroni and Cheese

16 ounces cooked penne pasta
1 clove garlic, smashed
2 Tablespoons melted butter
1 16 ounce tub Creme Fraiche or Sour Cream
1/2 pound Gruyere or Swiss Cheese grated
1/2 teaspoon salt
1/4 teaspoon ground pepper
1/2 -1 cup breadcrumbs
4 Tablespoons melted butter

Preheat oven to 350

Boil pasta as desired and set aside.  Mix grated cheese and Creme Fraiche/Sour Cream in large bowl, season with salt and pepper.  Let sit.  Rub all surfaces of a casserole with the smashed garlic, then add melted butter and cover all surfaces.  Pour cheese mixture into pan and cover with bread crumbs.  Pour remaining butter over bread crumbs.  Pop into oven until hot and bubbly.  Serve hot..  OOO La La!
